I am not an expert on this.
It seems to me that your problem is the use of very fast USB sticks USB 3.0/3.1 ?
Zero 4k 1x USB 2.0
Which probably don't communicate well with Zero 4k.
I have no answer to this.
Maybe one of our coders sees the post.

Maybe you can try making a first smaller partition with
FAT32 format and large with Linux format
and mount.
USE win PC and some software tool.

Devices that require USB 3.1 transfer speeds of 10Gbps might not work with USB 3.0 or USB 2.0, or you might experience lower transfer speeds and impacted performance.

I have purchased 2TB USB Flash Drive 3.1 just to test this issue .
I have made 2 partitions
1 for 1TB
and another one for 1TB
After rebooted zero4k has mounted 1 partitions as media/usb but no sign of second partitions. And its working without any problem.

I talked about the same. :)

1)
if you format a flash drive and mount it as HDD (media\hdd), after a reboot, this setting will be stupidly lost.
2)
if you mount the flash drive as USB (media\usb), then after reboot the setting will be saved, but ...
...if you specify the path "media\usb" in the Recording Settings, then it will write to the internal memory (2Gb)
3)
if more than one partition was selected during formatting, then only the first will be displayed in the device manager.

wtf?
